Domu: Hospitality by Argiolas Winery in Serdiana


Ristorante Domu
Domu is the new jewel of Argiolas Winery, the wine-producing company now in its fourth generation and the creator of many iconic labels, including the renowned Turriga.

Located in the historic center of Serdiana, a village just a few kilometers from Cagliari, in the beautiful historic region of Parteolla—rich in olive groves and vineyards—the restaurant is housed in an ancient Sardinian home that has been expertly restored. Domu means “home” in Sardinian, and this is precisely the philosophy of hospitality that permeates the space: making guests feel at home.

The restaurant seats 28 guests, plus a charming courtyard that can be used from March to October, offering the same number of additional seats.

The atmosphere is elegant, comfortable, and never affected—cozy. The seating features the iconic, ultra-light Chiavarina chairs; every detail and decorative element is carefully curated to make the experience both pleasant and memorable.

At the helm of a predominantly female brigade is Alessandro Taras, a highly experienced chef and entrepreneur with a keen eye for detail, both technical and creative. The kitchen is open, and for those who wish, there is a beautiful solid-wood table overlooking it, allowing guests to enjoy the spectacle of preparation, cooking, and final plating.

What to Eat
The menus change frequently and offer both a seafood and a land-based tasting path.

The seafood menu, which I chose, included “Smoked fish pâté, garden vegetables, raw and marinated,” a fresh and excellent opening.

The first course was also outstanding: “Fregua with seafood and lemon.” Here, fregula, one of the best-known Sardinian pastas, enhances its natural qualities thanks to a sauce based on shellfish.

The second course was “Catch of the day fillet, sautéed zucchini, Vermentino sauce.”

This is à la minute cuisine, where flavors are clean and the freshness of the ingredients clearly emerges.

Dessert is the same for both menus: “Pardula mousse, caramel, saffron sauce, gatteau crumble.” The homage to pardula, the traditional dessert made with ricotta and saffron, is evident, as is the interplay with the fragrant almond crunch, also typical, resulting in a dessert that is contemporary yet faithful to the flavors of Sardinian confectionery tradition.

Both menus are priced at €45, wines excluded. Naturally, the wine list features Argiolas labels, with no shortage of choice.

I selected a bottle of Spumante Brut Tagliamare Rosato, one of the winery’s most recent releases, which on the nose offers delicate notes of white flowers, peach, pear, and citrus, blended with aromas of Mediterranean herbs.

For those interested in the meat menu, the current offerings include: “Pane frattau with soft egg, tomato, and pecorino”; “Malloreddus with goat ragù”; “Slow-cooked beef, whipped potato, red wine sauce,” followed by the same mousse dessert.

Lunch and dinner are available by reservation only.

The property also features five carefully furnished rooms, spacious and comfortable, offering accommodation in the Parteolla area, just outside Cagliari, which has much to offer—from vineyard-covered hills to archaeological sites, as well as olive oil tourism experiences at nearby mills, and more. Parteolla could become an important enogastronomic tourism destination if only it were believed in more strongly and supported by a suitable ecosystem. Several public and private stakeholders are working toward this goal, and I am confident it will happen: Parteolla deserves it.

Guests can also book the traditional winery tours and guided tastings; Argiolas Winery has been very active in wine tourism for many years.
